You don't need any specialist cooking pots or utensils other than
- A few different sized, heavy based lidded pans or casseroles.
- At least one pressure cooker (don't look heaven wards .. . I
have been told many times that the West hates the things
..
but in India they are on the go all the time. Think of how quickly
you can get those meat curries and lentils done!)
- Large frying pan.
- A wok or the Indian version but heavier, the kadhai, for stir
frying and deep frying.
- A grinder or blender for wet and dry ingredients and a coffee
mill for small quantities of spices.
- A grater, a wok or the Indian version the kadhai (which is heavier),
peeler and a set of good knives.
