salmon with garlic crumb - Serves 4

Although pink salmon is not normally found in India, a near relative called 'surmai' is eaten along the western coast.
This innovative recipe is inspired by the seafood cuisine of Goa although the spices are served as a crisp topping rather than in a curry which can smother the velvety delicacy of this fish. Serve the fish on top of a green salad or with rice noodles tossed with chopped coriander.









Preparation time: 5 minutes        Cooking time: 10 minutes


4 salmon steaks
2 tablespoons sunflower oil
100g (4oz) bread crumbs
¼ teaspoon garlic paste
2 tablespoons broken cashew nuts
½ teaspoon turmeric powder
Onion salt to taste
  1. Brush the salmon with a little of the oil, season and grill for about 10 minutes.

  2. Meanwhile heat the remaining oil in a frying pan; add the breadcrumbs, garlic, nuts, turmeric powder and salt. Cook until deep golden, stirring continuously.

  3. Spoon over the fish and serve immediately.
